Texas K-BBQ Ribs

It doesn’t look like we’re getting bbq weather this weekend so we’ve put together a delicious bbq recipe you can make in the comfort of your own home - no rain-gear needed!

Serves: 6

Level: Moderate

 Recipe
  1. Ask your butcher for some free-range (if possible) pork ribs
  2. Trim the silverskin from the bottom of the ribs. Use a sharp knife to make an incision and then pull the silverskin straight off. If you don’t fancy doing this just ask your butcher to do it!
  3. Mix equal parts salt & pepper to make a texas rub - dust the ribs with the mix and massage it all over
  4. Wrap tightly in tin foil and leave for 6 - 12 hours to marinade in the fridge
  5. Preheat the oven to 135 °. Pop the ribs in their foil wrapping on a baking tin for three to four hours. Check after three hours - you’ll know it’s done when the meat pulls off easily
  6. Remove from the oven, unwrap the ribs and place on a clean baking tray. Turn the oven up to 170°
  7. Lather the ribs in K-BBQ sauce and pop them back into the oven for 15 minutes to allow the sauce to caramelise.
  8. Allow to cool slightly and serve with some pickles and texas toast (buttered and grilled white pan). Enjoy!
