Korean Hot BBQ Baba Ganoush

Deliciously smoky and spicy one bowl baba ganoush recipe. Grab your Chimac Korean Hot Sauce and a couple of aubergines for a quick and easy dip.

  1. 2 - 3 Aubergines
  2. 2 tablespoons Korean Hot Sauce
  3. Salt & pepper
  4. Juice of half a lemon
  5. 2 tablespoons of Tahini
  6. Some tasty olive oil
  7. Feta (optional)
  8. Coriander (optional)

    1. When the BBQ is nice and hot, throw in two or three aubergines
    2. Let them cook on the coals for 5 mins a side, keep turning until they are soft
    3. Remove from heat and let them cool
    4. Remove the cooked flesh, trying to avoid too much of the charred skin - a little is tasty, too much is too smoky and will overpower the flavour
    5. Add a tablespoon of olive oil, tahini and the juice of the lemon, using a fork to mash and mix
    6. Add salt and pepper to taste, a drizzle of Korean Hot Sauce and some feta and coriander if you fancy
